Pickled Eggs


We have had many customers over the years ask why our pickled eggs are not as soft as a fresh hard boiled egg. The answer is simple, the pickling process naturally tends to make the pickled egg a little harder than fresh boiled, not pickled straight from the stove top eggs. Pickled eggs are hard boiled but one must understand they can not be compared to fresh hard boiled in texture.


I had a customer email today stating our pickled eggs were not near as soft as the ones he had hard boiled yesterday. I told him the same thing I stated above, he is comparing two totally different types of foods, which is not a fair comparison.


I have tried every brand of commercially produced pickled eggs and they all have comparable texture. It seems they tend to get rubbery when they have gone past their "use by" date. We never ship out of date product and guarantee the freshness of all of our products.

Pickled Eggs


Pickled eggs are hard boiled eggs that are usually preserved in a vinegar base. Many different recipes and manner of preparing pickled eggs are available. Some folks prefer a sweet egg and add beet juice and sugar, some prefer a hot egg and add red hot chili peppers. The main ingredient never changes, good old fashioned fresh eggs.

Pickled eggs have many health benefits, they are low in fat, low in carbohydrates and provide a great source of protein. Pickled eggs are the healthy snack alternative, they need no refrigeration and can be used in many ways. Try some sliced on a chef salad or mixed with your potato salad.

Years ago folks did not have refrigeration and created pickled eggs out of a need to keep eggs fresh without refrigeration. These days pickled eggs have become a great taste treat. As they say, necessity is the mother of invention.

Here in Wisconsin pickled eggs can be found on the back bar in almost any tavern. Most grocery stores also sell small jars of pickled eggs on their shelves. Unfortunately certain parts of the country do not have pickled eggs available for retail purchase. Pickled Eggs
Here is a recipe for folks who want to do it the old fashion way:.
12 eggs1 cup cider vinegar1/2 cup water2-3 whole garlic cloves3 tablespoons pickling spices5 tablespoons sugar1 teaspoon salt1 fresh red chili pepper (delete pepper for mild eggs)
Hard boil 12 large eggs and shell. Boil the other ingredients for 10 minutes and let cool. Place eggs in jar and pour vinegar mixture over the eggs. Let the eggs sit in the refrigerator for at least one week. Keep refrigerated until served.
