Dave's Cupboard: Pickled Lamb's Tongues

This gentleman took it upon himself to produce home made pickled lambs tongue and they look great! My mouth is watering just looking at the picture of the finished product. Of course I am a person that is pickled crazy, pickle it and I will eat it!

We have looked at making them commercially but unfortunately in our part of the country pickled lambs tongue is a product that is nearly unknown. The expense to make them commercially requires a good market locally and we do not have that in Wisconsin.

We will continue to search for a commercial producer and if we find one we will definitely stock them.

Pickled Lambs Tongue

I have been getting many emails regarding a previous post about pickled lambs tongue. Unfortunately I have received no leads in the direction of finding a current producer of pickled lambs tongue. The Rogers Company appears to be the last to produce this unique product and they went out of business about 5 years ago.

I found an interesting article in the Milwaukee Journal that waxes nostalgic about old fashion pickled foods and the corner tavern. According to the article pickled food consumption has seen a decline since the demise of the corner tavern. We have noticed a similar trend in our wholesale business as we sell mostly to taverns.
