We have used UPS as our only shipped for at least 10 years. Yesterday we were told they will no longer honor their insurance for damage that they cause in shipping. UPS arbitrarily decides that packaging is insufficient and thus the insurance will not be honored. We pack past UPS guidelines for packing requirements so there is no good reason why UPS should not honor its written insurance policy.
UPS in its corporate need to cut expenses and make more money has decided to alienate its customers and not honor its written guarantees.
We have very little breakage as we do pack very well. What gets me is the lack of respect for its customers that UPS tends to show.
Our customers never have to worry, we always honor our guarantee to get your products to you in one piece or we replace them free of charge. If only corporate america would take a cue from us small businesses?

Pickled Pork Hocks
Pickled Pork Hocks or Pickled Ham Hocks, both the same product. Pickled pork hocks are cured, smoked, cooked and pickled. They might be compared to pickled ham but do have more fat and cartilage than pickled ham would. This is their allure, the skin, fat and cartilage are arguably the best parts of the pickled pork hock.
We have had some questions about our Bayview Brand Pickled Pork hocks. The Premium Cut Tavern Style Pickled Hocks are whole, boneless hocks with all of the skin intact. Taverns use these as they make a great single portion serving. We also have Bayview Hocks that are boneless slices and some pieces, just as great as the Tavern Style Hocks but not the whole hock in one piece. The regular hocks are quite a bit less expensive than the Tavern Style Hocks and if you are not worried about single servings as in a bar they are a great deal!

Pickled Eggs
We have had many customers over the years ask why our pickled eggs are not as soft as a fresh hard boiled egg. The answer is simple, the pickling process naturally tends to make the pickled egg a little harder than fresh boiled, not pickled straight from the stove top eggs. Pickled eggs are hard boiled but one must understand they can not be compared to fresh hard boiled in texture.
I had a customer email today stating our pickled eggs were not near as soft as the ones he had hard boiled yesterday. I told him the same thing I stated above, he is comparing two totally different types of foods, which is not a fair comparison.
I have tried every brand of commercially produced pickled eggs and they all have comparable texture. It seems they tend to get rubbery when they have gone past their "use by" date. We never ship out of date product and guarantee the freshness of all of our products.

PICKLED TURKEY GIZZARDS
OK, they might not be for everyone but those with an open mind and a love for old fashion pickled meats will more than likely fall in love with these oriental delicacies. I first tried them many years ago when living in MI. Believe it or not they were included on many salad bars in supper clubs. Once one gets past the fact that these are gizzards the taste is fantastic!
Pickled Turkey Gizzards are cooked, cured and then packed in a pickling brine with select spices. They are ready to eat right from the jar and are great dipped in mustard or just plain.
The best I can do to describe the texture is to compare it to tender steak. The vinegar only adds to the great turkey flavor. I am not a betting man but will guess a true pickled foods lover will love these tasty treats.

Shipping PIckled Foods
Many folks ask how we ship our pickled foods. Most of our products are packed in glass so we ship very carefully. We use UPS as they have been the provider that has done the best in the areas of service and reliability.
We carefully wrap our products in bubble wrap and surround with kraft paper and double box for safety. Our products need no refrigeration so they ship well year round. We guarantee our customers will receive their orders in one piece or we will replace what is broken free of any charge.
We are proud of the fact that we have a breakage rate of less than 1 package every two months. I'm not sure if this is a testament to our fine packing or to how UPS handles our packages.
We don't consider a purchase a sale until it reaches our customer in good condition.

Rogers Company Pickled Lambs Tongue
I have received many calls from folks looking for pickled lambs tongue. Unfortunately the Rogers Company appears to have been the last to make it commercially. The Rogers Company went out of business about 5 years back and it appears pickled lambs tongue might be lost to pickled food history. Cajun Pickled Smoked Sausage & Beer Sausage
