My mouth is watering just looking at the picture of the finished product. Of course I am a person that is pickled crazy, pickle it and I will eat it!<br /><br />We have looked at making them commercially but unfortunately in our part of the country pickled lambs tongue is a product that is nearly unknown. The expense to make them commercially requires a good market locally and we do not have that in Wisconsin.<br /><br />We will continue to search for a commercial producer and if we find one we will definitely stock them.<br /><br />The link to Dave's Cupboard Blog is below which gives great instructions on how to do it at home. Yesterday we were told they will no longer honor their insurance for damage that they cause in shipping. Pickled pork hocks are cured, smoked, cooked and pickled. They might be compared to pickled ham but do have more fat and cartilage than pickled ham would.
